The restaurant will be able to satisfy both your wish to get to know the products of the local area … and the desires of your palate. Our pasta is all hand-made, using only local flours. The meat we use comes primarily from farms we know and trust located in the Val d’Orcia Park.The Florentine steak we serve is selectively sourced from Chianina PGI cattle and our pork is always from Siena Cinta PGI pigs. Our fish is always fresh. The sea fish come from the waters of the Mediterranean and the fresh water fish come from the nearby lakes.Our vegetables are those of the season and for the most part are organic.
The oil on our tables is always DOP (Protected Denomination of Origin) extra-virgin olive oil. The cheese we buy is made by local shepherds still working with traditional methods.Our desserts are prepared every day by our Chef with healthy and genuine ingredients and natural flavouring.The wine menu gives preference to labels coming from the cellars of small producers of the Val d’Orcia and the Province of Siena which holds the record for 5 DOCG products (Controlled and Guaranteed Denomination of Origin) and 12 DOP products (Protected Denomination of Origin). You will also find a fine selection of other Italian wines in our wine cellar.
